    Question Does lean pork have less fat weight than lean beef?

    Meatwise, I've been eating beef. That is, bovine muscle as clean of visible fat as I can manage. For my macro/caloric calculations, I've been using 25% protein & 8% fat by weight for bovine muscle.

    Anyway, now I'm looking at incorporating some pork muscle into my diet and I'm stumbling at the data I find: around 21.5% protein & 5.7% fat at most. Some claim as low as 4%.

    So is this correct? Is pork muscle less fatty than bovine one by weight? (Raw meat for all values).

    They've been raising pigs with less fat for at least a generation now due to consumer preferences. The problem there is that pork dishes can get really dry very easily if you overcook.

    There are lean and fatty cuts on both animals. There is also a lot of variance between one animal and the next. So labels are usually pretty broad guidelines but you can still use them and on average over time, they will probably be not too far off the mark.
