Guess how much meat came from this animal

I went to a house to collect weekly rent from some tenants. They had placed this skull by the front door. All the meat from the animal was processed into hamburger, and the hide was tanned. Can you guess the animal and guess how much meat it yielded?

It's a water buffalo from an exotic animal ranch. They got about 250 pounds of meat from it. It died in a pond, and they had to use logging chains and a tractor to pull it out. The guy used a .458 Socom with a 305 grain solid bullet in an AR style action. I saw the bullet after he recovered from the buffalo. Zero deformation from penetration. The only marks on the projectile came from the rifling.

The cartridge on the left is a standard military round. The cartridge on the right is what the guy used.
