Hey Benny. One way I like to cook vegetables is to roast them. They come out concentrated in flavor and retain their nutrition.
One recipe of mine is simple: Cut some carrots and turnips into symmetrical sizes. Place into mixing bowl. Add 1 or 2 tablespoons of oil. Salt, pepper, garlic powder. Mix well.
Pre-heat oven to 375F. Bake for 45 minutes to 1 hour.
You can also add mushrooms, but add after the carrots and turnips have baked for 30 minutes.
Recipe 2: Boil carrots or carrots and turnips for about 40 minutes or until very tender. Pour off water in a colander. Put back in pot, smash like mashed potatoes, add butter or substitute, salt and pepper, garlic powder.

I've got a recipe for drink that I'm happy to share.
Take spinach, blueberries (I use frozen for both), and ginger. Add chopped green chiles, asparagus, celery.
Add basicly anything green or thats supposed to have health benefits. Girlfriend bought goji berries for some reason and doesn't care about them any more? IN. Garlic? Sure, IN. Mustard seeds? IN.
Add a mug of green tea and add any magic powders. Creatine, lecithin, yohimbibe, anything you want. Caffeine pills, vitamin pills, fish oil. Add if you want.
Blend until smooth.

If you like curry this is a go to that we like. More of a winter thing due to running the oven. You can make it with supermarket frozen vegies...just add some potatoes.

Here is my go with it, served with chicken and rice. You can leave out out the chicken and its still good.

I buy tons of dollar steam-in-bag veggies, it makes it incredibly easy.
When I pack a meal for work, I typically throw meat on my kitchen counter grill and let it cook while I go shave. I come back, nuke a bag of veggies, dump the veggies and meat in one container, and then throw in other stuff if I'm feeling froggy.
You want just the veggies? Nuke em, throw em in a bowl, add what you want for taste (salt and pepper, butter or olive oil, etc.), eat it.
California medley is my personal favorite.
