    Does heat from cooking destroy the protein in Greek yogurt?

    I've been grilling boneless chicken thighs that I liberally marinate in Greek yogurt plus seasonings. I cook the chicken until it is done, not until it is well done. Does the protein in the yogurt maintain its bioavailability? This is my first post in a long time in this forum that legitimately relates to nutrition.

    Protein denatures from cooking to varying degrees depending on the type and the level of heat, but that doesn’t render is inert.

    I highly doubt THAT much yogurt is sticking to the meat such that it would meaningfully impact your daily totals…

    But generally I think the only real way to make the protein useless would be to totally burn it to a crisp

    There's a full serving of yogurt that I use for the marinade. Whatever is left on the plate after the meat is on the grill, I use a spoon to put it on the rough side of the meat. There are more "hills and valleys" to retain the yogurt.

    and i always heard the deal with heating and denaturing was more about changing the internal processes by which it's broken down in the gut - and didn't truly change the original content, in terms of calories, grams, etc 🤷‍♀️
