    Does chicken breast lose protein when pan seared?

    Started cooking chicken breast on a pan and it went from 200g to 130g at the end. (Not saying it lost protein) Does oven cooking it preserve more of the protein or is it insignificant?

    Insignificant. The change in weight is from water loss in the meat through the cooking process. While I don't suggest doing this, eating raw chicken will be much moister than fully cooked chicken.
