I am 16¼ years old and 166cm/5'5 barefoot. (measurements of a couple months ago) I weight 56kg/122lb. I should note both my parents are quite short.
I believe that in the past malnourishment (frequent intermittent fasting, not caring what I eat, eating little), sleep deprivation, stress and lack of sunlight exposure have stunted my growth. Today I follow a healthy high-protein (minimum 100+g/day) high-calcium (minimum 2000+mg/day) diet, eating at a very slight caloric surplus and trying to consume a wide, balanced palette of vitamins. I have fixed my sleep and sunlight problems.
I have currently a physique which could be said to be still in the skinny-fat realm and I would like to start cutting soon for aesthetic purposes. My question is, is there any way I could go about this without sacrificing height growth? I've read fasting drastically boosts human growth hormone. Could this work?

I've never heard anything about cutting at 16 stunting your growth. I think it's BS. I've seen so many people workout from the age of 13 onwards and they grow to completely 'normal' sizes. You should just stick to your diet and training and cut/bulk to whatever you desire.

It's entirely possible that witholding nutrients at key stages in development will limit ultimate growth. This is seen in populations that suffer malnutrition.
Cutting at 122lbs sounds pretty unhealthy to me...
OP - abs on a skinny kid are like boobs on a fat girl - nobody cares.
Eat, grow muscle, be happier.

I am also 5'5" and have been anywhere between 100ish pounds at my lightest and 200 pounds at my fattest (which was at age 16). At 122 there is nothing for you to cut down to, I can definitely confirm that, did it, would not recommend it.
You would look much better at a higher weight with more mass, rather than cutting down now; you wouldn't even have good abs at less weight, just look malnourished.Short cuts to success are often paved with lies.

Of course, if you're malnourished your growth will be stunted. But if you're making sure you get all your essential macro and micronutrients and are only doing a small deficit combined with the routine exercise it shouldn't have any effect.
But yes cutting at 122lbs seems very unhealthy, you won't have any muscle to cut down to. Suffolks analogy sits well5'9 180lbs/82k
