For me, it's like this:
1. Seared Salmon Avocado Roll. The light searing of the fish while leaving the bottom portion still raw is the perfect combination of texture and flavor
2. Spicy Tuna Toll. Just a classic option that I'll order basically every single time.
3. Rainbow Roll. I had this one for the first time recently (I usually stick to more basic styles), but man, it's basically a Cali roll but with added sushi on top. Very solid!

Man this is tough to say because a lot of the ones I like have proprietary names for their “specialty rolls”. I tend to go to places and try things that sound good. As for regular rolls that most places have:
Shrimp tempura roll
Philly roll

There are so many variations that it's hard to choose, but my top choice has to have tuna or salmon. I love the more "western-ised" ones like the rainbow and dragon rolls too.
When I was in Japan they nearly exclusively always had just maki or nigiri. We opted for the latter and they had LOADS of different fish toppings. I'm used to having 2 tuna options, but for example they would have 20 kinds of tuna toppings!
Since many of the names were in Japanese we just chose those which looked nice and tried as many different types as we could.
Some sushi pics from night outs: one and two. I also tried my hand at sushi once...not very pleasant to look at but wasn't too bad for the first time trying.
Just FYI, they're called temaki."Get up, and don't ever give up".
