For me, it's like this:

1. Seared Salmon Avocado Roll. The light searing of the fish while leaving the bottom portion still raw is the perfect combination of texture and flavor

2. Spicy Tuna Toll. Just a classic option that I'll order basically every single time.

3. Rainbow Roll. I had this one for the first time recently (I usually stick to more basic styles), but man, it's basically a Cali roll but with added sushi on top. Very solid!

A lot of specialty rolls are more restaurant specific, but out of mainstream rolls I'd say Dragon Roll, Spicy Salmon Roll and whatever's on the menu that has Spicy Tuna + Crunchy Flakes in it.

Man this is tough to say because a lot of the ones I like have proprietary names for their “specialty rolls”. I tend to go to places and try things that sound good. As for regular rolls that most places have:

Shrimp tempura roll
Philly roll
Caterpillar roll

I only know of California and cowboy rolls by name... and tempura!

Sushi is delicious though so I need to expand my familiarity with different kinds.

There are so many variations that it's hard to choose, but my top choice has to have tuna or salmon. I love the more "western-ised" ones like the rainbow and dragon rolls too.

When I was in Japan they nearly exclusively always had just maki or nigiri. We opted for the latter and they had LOADS of different fish toppings. I'm used to having 2 tuna options, but for example they would have 20 kinds of tuna toppings!

Since many of the names were in Japanese we just chose those which looked nice and tried as many different types as we could.

Some sushi pics from night outs: one and two. I also tried my hand at sushi once...not very pleasant to look at but wasn't too bad for the first time trying.

Could be the difference in the place preparing the California roll using crab salad vs. just crab with the latter being the better option imo

What I mean is that the crab mix sometimes has kind of a creamy texture to it, unlike tuna or salmon which - although soft - has a subtle chew compared to the crab they use in a Cali roll.

Oh ok yea the texture's definitely a bit different from other fish rolls.

I'd also add to the discussion that the best rolls, if you're somewhere really good, are always the specialty rolls. The best foods I've ever eaten are probably specialty fish or rolls at top quality Japanese restaurants.

The best roll i've ever had actually had seared salmon, eel, and pickled asparagus in it as well as this tangy hybrid teriyaki/chili sauce on top with tiny little bits of tempura batter.

It was insane.

Yeah creamy sushi makes me gag, I stick to the basic rolls, they’re cheaper but just as filling.

Yup, mostly mayo, some sriracha and diff places with throw in a spritz of diff things.

None of the rolls Adam & I listed necessarily have spicy mayo if they aren’t Americanized. Even the spicy tuna I get just has Sriracha, marinade, & Japanese seven spice. No mayo or cream involved
