Oldboy has been mentioned, the other movies in the "Vengeance Triolgy" by the same director are good: Sympathy for Mr. Vengeance and Lady Vengeance
My favorite Korean thriller is "The Chaser." Keeps you on the edge of your seat the whole movie, great ending. Snowpiercer is a good one, especially now that governments are talking about banning red meat and encouraging insect diets as a solution to climate change.
The only other one I can remember that hasn't been mentioned is The Host.
It's nice to watch some films outside the typical Hollywood paradigm, but I could not bring myself to enjoy Parasite. Something about was just deeply unsettling and not in a thriller/horror way.Beans. Cleans. Gasoline.
