    A couple years ago at a company Christmas party we all went to a fancy steakhouse to celebrate..

    Of course we were all having filet mignons because that's what you do at company christmas party's..

    Across the crowded table the waiter asked a coworker how he wanted his filet mignon cooked...

    He answered "well done"

    I'd be lying if I said I didn't entertain the thought of lounging across the table and driving my fork into his corroded artery ....

    Cooler heads prevailed and I ordered another beer..

    LMAO Mark, there was a time that I would let the animal run by a 100 watt light bulb, wipe its ass and slap it on the plate, I changed over time and prefer it well done..

    We're "supposed" to like it pink in the middle at least. If there's some cookery thing on TV it will always show very lightly cooked. Cooking it 5 is seen as uncultured for people that don't know the correct way to eat steak.

    I only ate once in a REALLY REALLY expensive French restaurant (someone else was paying) and when I said very well done the waiter stopped and looked questioningly at me, I just repeated "very well done". I think this is a load of BS because most people (myself included) actually like it very well done. There is a difference in flavour, to my taste, it tastes better especially with stronger steak like rib eye.

    Edit: I remember it being a criticism of your last President that he eats steak well done and with ketchup (the horror!) Some people will try to politicise anything!

    For meat, it all depends on the fat content and leanness. Ribeyes can be great if just about well done if cooked right and seared.

    Filet Mignon is so lean, well done kills it. Has to have pink.

    When I cook Skirt Steak, it is well marbled. I sear it well on both sides, smoke it for about 30 minutes, then let it cook wrapped about 30 minutes. Then, I take off the heat to let it rest a good 30 minutes. Then, I slice against the grain, heat up an iron skillet to smoking and sear them for an almost charred crust, which retains the moisture.

    I find all of the Tenderloin a bit tricky to cook and the further you get down towards the Filet the trickier it gets. I slice mine around 2 inches thick and I bake it in a cast iron pan flipping once. I have been doing ot that way for 40 years or more and I still have to watch it very close to get it just right. It doesn't take long.

    I do all my own butchering but never seen a steak wearing skirts yet, where the hell do ya cut that from? Only thing I can think of is off the ribs am I close?

    It is beef steak from the plate. It is the cut that most Restaurants and people use for fajitas. It is chewy and sinuous so has to be cooked right. Chefs on TV like most meat almost raw including skirt steak and I hate that. You do have to be careful to not dry it out by enclosing it in foil after searing and smoking.

    Ahhh ok I got ya now, I don't keep that as a cut, that ends up in my trim bucket and use it for burger or sausage

    That’s a good way to use it. Before it got popular, that’s what the restaurants did. Hispanics basically brought the idea. Another good nest I use for fajitas is flank steak. It is much more lean, but if cooked right, it is very good.
