I was shocked, too. I thought for sure MT takes a bite out of an Elk heart right after the kill to take its soul. That ain’t even on the chart.

A couple years ago at a company Christmas party we all went to a fancy steakhouse to celebrate..

Of course we were all having filet mignons because that's what you do at company christmas party's..

Across the crowded table the waiter asked a coworker how he wanted his filet mignon cooked...

He answered "well done"

I'd be lying if I said I didn't entertain the thought of lounging across the table and driving my fork into his corroded artery ....

Cooler heads prevailed and I ordered another beer..

We're "supposed" to like it pink in the middle at least. If there's some cookery thing on TV it will always show very lightly cooked. Cooking it 5 is seen as uncultured for people that don't know the correct way to eat steak.

I only ate once in a REALLY REALLY expensive French restaurant (someone else was paying) and when I said very well done the waiter stopped and looked questioningly at me, I just repeated "very well done". I think this is a load of BS because most people (myself included) actually like it very well done. There is a difference in flavour, to my taste, it tastes better especially with stronger steak like rib eye.

Edit: I remember it being a criticism of your last President that he eats steak well done and with ketchup (the horror!) Some people will try to politicise anything!

Ha...No, I didn't mean to imply that a person must be some kind of philistine for preferring a well done steak...people like what they like. But, we debate about everything else around here, so why not the best way to cook a steak?

For meat, it all depends on the fat content and leanness. Ribeyes can be great if just about well done if cooked right and seared.

Filet Mignon is so lean, well done kills it. Has to have pink.

When I cook Skirt Steak, it is well marbled. I sear it well on both sides, smoke it for about 30 minutes, then let it cook wrapped about 30 minutes. Then, I take off the heat to let it rest a good 30 minutes. Then, I slice against the grain, heat up an iron skillet to smoking and sear them for an almost charred crust, which retains the moisture.

Ahhh ok I got ya now, I don't keep that as a cut, that ends up in my trim bucket and use it for burger or sausage

That’s a good way to use it. Before it got popular, that’s what the restaurants did. Hispanics basically brought the idea. Another good nest I use for fajitas is flank steak. It is much more lean, but if cooked right, it is very good.
