What do you guys use?
I want pretty good/best for a new computer im getting soon.
I kinda like the idea of a mechanical keyboard. Are those good? Is it better to have them wired? I think less wireless items is better.

Gaming
Video editing
Minor typing/writing projects

I've probably spent over a thousand dollars on keyboards/mice in the past couple years though. I've tried 60% keyboards, 70% keyboards, TKL, pretty much all of them.
You say you want it for video editing which means you need keybinds probably. For that I would steer away from anything less than 70% keyboards. I work as a software developer and TKL is my favorite, mainly because it gives me all the keys I need but gives me more desk space than a full size keyboard. I never ever used the numpad when I had a full sized keyboard so it's not like I was losing anything.
Another big thing is what switch type you like for a mechanical keyboard. Blue, brown, and red are the most well known, but there are tons of off-brand and custom-switches you can pick. I like brown switches the most personally for typing and gaming.
Then for the wired/wireless, I would recommend a wired keyboard no matter what, just because bluetooth has some latency, which if you play games is no go. But for mice I would 100% recommend wireless. Once you go wireless you can't go back, it's so nice not having to deal with the cord.

I wouldn't say keyboard brand matters that much and I've tried a bunch. Every mechanical keyboard around $100 - $150 (wouldn't spend less than this) has about the same build quality, so just pick whatever you think looks best and decide if you need a full size like the guy above explained. Switches are what matters most and I would never go for browns. It's a middle of the road solution that doesn't really stand out for any type of activity. Its actuation force is too high to the point where my fingers got cramped up after playing fps games for a couple of hours. Reds are always a safe bet, or speeds (clears) if you're into fast paced games.
Mouse is too difficult to recommend any specific one, but if you're serious about gaming, then you're going to want the best possible sensor. This website lists them and explains why. As you can see, any Zowie or Logitech is pretty much a nobrainer buy, but Razor and Steelseries have some decent ones too. I just don't like their build quality and paying a premium for nonsense RGB lighting.

Everyone's "best" is going to be different
The best mouse is one that feels 100% comfortable in your hand; there shouldn't be an adjustment period
