Bleach has more fights if that’s your thing. Hunter x Hunter has much better story telling and character development.

HxH is awesome but you have to get through the first two world building seasons. GF and I just watched it and she loved it.
Bleach is the opposite. Its awesome right off the bat but sucks after the soul society arc imo. Watched like a decade ago lol.

They are like opposites in a way
Bleach starts off good but then falls off a multiple cliffs as the series goes by. Way too many fillers, nonsensical power scaling worse than Naruto. It's also way too long and it will take you several months to watch it all and that's if you binge watch it everyday.
HxH watch the 2011, there are less fillers I believe and has an extra arc I think. Starts a little slow but gets way better as it goes on. Great character progression and interesting characters like Hisoka, Killua, Kurapika, etc, even the minor characters like Knov. Although it looks like one of those light-hearted animes for kids, there are plenty of darker themed moments and I think it turns darker as you get through it, where you are like fuark mane. The Chimera arc is pretty phucked lol, the pacing is a bit slow here as well but overall it's good stuff.
It reminds me a lot of FMA:B in a way which is another GOAT anime that you should watch btw if you haven't.positivity brah crew

first arc of bleach is amazing imo. HxH is better in the long run. Watch both on 1.25x or 1.5x speed.

Bleach:
+ cool characters with manly designs which fit more with Western beauty ideals, less twinky than most anime characters
+ really good second arc
- story and writing are barely even existent after that
+ a lot of cool fights with crazy powers
- powerscaling is somewhat off
- random powerups stacked onto each other
- Anime is unfinished, despite the mange having ended, might return to television soon
Hunter X Hunter
- simplistic character designs
+ brillant writing, even side characters have their own personalities
+ fights are mostly won with ingenuity and dedictation not raw powerlevels
+ nonlinear unique plotlines
- no real ending in sight, Anime ended, Manga might never continue

I used to watch anime when I was younger but I stopped paying attention in the last 15 or so years. I agree about Hunter being one of the best. I recently got back into it and I am caught up with the most recent episode of Black Clover.
