I Need Opinions/Advice On 2021 Training Programming? (Long Post)

Hey I've recently reflected over my training the last couple years. Before, I came to the conclusion that I just suck at lifting. I started my first bulk in the beginning of 2018 and now at the end of 2020 I am 170lbs 18-20% BF Benching 225x1 OHP 170x1 Deadlift 405x1 Squat 300x1. I followed a novice program for those two years wondering why it was taking me so long to hit intermediate numbers even tho I was working my ass off. I realized it came down to lack of understanding of how to carry out the program and doing too much too fast, in 2020 I made the most progress I have made and came close to intermediate numbers.

I peaked out at 185lbs 24% BF and cut down to 170 However at 185 and currently 170 I can't seem to get my numbers up, I even regressed. Many on this forum attributed this to the program I was following Which had me benching, OHP, Squatting 3x Per Week and said this was too much. They Recommended I finish off my novice phase on Greyskull LP.

    This year I want to finally hit some big numbers 300(+)x1 Bench / 200(+)OHP / 500(+)x1 Deadlift/ 400(+) Squat Preferably at 175lbs.

My plan was to run Greyskull on a slight caloric deficit until the end of February to hit intermediate numbers at 160lbs Bodyweight.

Then start Texas Method in March and run it until I hit my numbers.

Is this a good plan? Are there any tips or programming advice you can give me to achieve these goals. I want to finally find my groove with lifting after trying for so long.
