First of all, Chicago-style thin crust is the superior format.

Second of all, the Phoenix pizza scene is a sleeper that is on the way to greatness. Nobody should leave Scottsdale without having a pie and a cocktail on the patio at Craft 64, and Goldbelly ships Pizzeria Bianco nationwide and can charge extravagant prices for it for a reason.

i'll have to check out that craft 64 place. i had never heard of it before but i generally don't spend any time in old town as i live like 30+ minutes north of there

i used to agree with your chicago thin crust assessment until lou malnati's came to town a couple of years back. Lou's deep dish is literally the only pizza i want to eat right now. prior to that all i ate was chicago thin crust

Zuppardi's white clam is the best pie I've ever had. Da Legna on State street is good too, but a notch below the rest for the same price.

Haven't been in years but I would only go if I could get there right when they were opening and try to be one of the first to get my order in. They make them one at a time so if you don't get in early then the wait is going to be miserable.

Yep, looks identical.

Even the sauce is different. Other areas of the country use very sweet sauce, which you would never find in the tristate area

And yes, the mineral content of water has an effect on on the dough

I'm not a baker but from my beer brewing experience I know that yeast impacts flavor, so I'd imagine whatever they have over there is probably some variety that has been cultivated by that area. If somebody is flying it out I'd bet that's part of it, also when I was in Italy the food was far more fresh and better overall than what we get here. Better ingredients better pizza right
