Anyone here exclusively likes to air fry veggies? I read that they are just as good as steaming for retaining nutrients. It would certainly make veggies more palatable.

I cook the majority of my veggies in the air fryer and absolutely love how easy it is. This includes some of my staples such as potatoes, broccoli, brussels sprouts, asparagus, zucchini, cauliflower etc. I usually don't even need oil but sometimes I'll give them a quick spray with some EVOO to let seasonings stick better.

I’ve been doing this a lot.
I doubt when they get charred they’re as ‘healthy’, but it’s delicious.
I know that several vitamins can definitely be damaged/destroyed at high temps.
Air-frying potatoes is definitely not as good as boiling or steaming tho... potatoes cooked with high/dry heat produces acrylamide and also increases the GI (not that GI matters that much)Last edited by AdamWW; 10-28-2020 at 09:16 PM.

Hey I love potatoes in air fryer! Make fries or wedges, so good and can melt cheese on them while the air fryer is cooling down. Cooked plenty of veg in it. It is one of the best purchases I've ever bought.

The only reference to oxalates in there is a single sentence:
'Some food products contain excess oxalate, which prevents absorption of calcium by binding with it. Intakes in excess of 1200–1500 mg/day may increase the risk of developing kidney stones, cardiovascular diseases, and strokes.'
So... you're doing this because your bone issues?
