I always made my protein shakes with milk, but I thought of checking the package and it says to do it with water for better absorbtion.
How is water gonna help with protein's absorbtion, compared to milk?
I know I could use water to avoid milk's calories, but I dont need to. Just wanna know how water may be better/worse, regarding absorbtion.

Milk has casein and fat which will slow down absorption a bit. But this will not make any real world difference for your results.
Take it with water or milk, whatever you prefer.Recommended science based fitness & nutrition information:

As mrpb said, the inclusion of other macronutrients can slow down absorption and possibly enhance amino acid utilization for a longer period, but real world you won't see any difference. The choice is really based off of do you want the added calories from milk, or no added calories with water? And, do you like the taste of milk vs water? That's really it.

I'm speaking in terms of how good it is for you vs how good it taste and I've had plenty of good ice cream but gold standard and milk is goat.

Just tried it. I did 300ml of milk with 1 scoop of chocolate whey and froze it for 3 hours and ate it straight from the freezer. Tasted just like chocolate ice cream. I'd definitely recommend it. Some of it inside was still liquid but just tasted like some of it was melted. If I froze it longer, it would probably all be solid
