O/U's >50 pts on the reg, 55-45 type scores are the norm, 500 yds of offense not a big deal.

Football is a game of checkers though, not chess. I am also certain that an expert human coach watching game film would handily beat a covnet. It would be different if there were 10,000,000 plays to watch of one team. I don't think the dataset would be big enough really to give a ML algorithm an advantage.

The other side of it is that beyond a few standouts, people rarely come up through the system playing defense as a speciality because everyone loves to score. If you're fast and agile, you play receiver, not safety.
Basically if you're too big and slow, you play defense. And then fewer players get to the point where they are standout secondary defenders or linebackers. The ones that do exist get far, but you might have 2-3 defensive threats on a team as opposed to 5-6 offensive ones.

Talent differential on O vs D. If you have one elite player on your team, a WR/RB is going to make a huge difference an score, while a shutdown defender won't matter because you can just throw in the opposite direction.
Same reason why high school games have way higher scores than college/NFL games
Low IQ to say its because people cant hit anymore and play "real" defense, hard to lay the hit stick on someone when he blows past you for an 80 yd td, this isn't the 80's college is about speed and exploiting matchups
