Ok, I am making Neapolitan pizza today.
Changed up the recipe. Using cold water instead of warm water like for bread. My ingredients are not premium, but the technique is. I really need OO Flour and fresh yeast, both I do not have.
After mixing cold water, salt and then adding some flour as a buffer so it won't kill the yeast, added remaining flour and kneaded for 20 mins. It is resting for 2 hours.
After the 2 hours, I will cut into 3 doughs, put on a sheet tray to rest for another 4 hours. Then, make the pizza.

I made the dough and kneaded it like a mad-man and it rested for 2 hours. I split it into 4 dough balls and covered them with plastic now to rest/rise fr 4+ hours.

Another chilly one here today, just pouring one last coffee down my neck and headed out on the hard water for a couple of hours, yesterday I tied into a monster in the lake behind my place. It's on the tines of the forks balanced.
When we had down time my old business partner and myself used to do stuff like this all the time.
My partner was a Master at doing this, he used to make a living selling his photos before he came to work for us..

No Worries brother.
Oh yeah me too, I miss a lot in the winter, ice fishing can be brutal for that, no matter which way it runs the line is rubbing on the ice, then you gotta get a big head on a tiny hole lol. I would have released it anyway and most likely in the hole never touching it, I don't keep any fish unless I am going to eat it right away and I like em small, in the 3 to 5 lb range, 25 days fished this season and just kept my first one the other day.
