    Yeah, it's a low background in remote mountainous areas, some parts of Andes, California, Tibet, etc etc. Handwashing/hygiene etc seem to keep it in background for last few hundred years and antibiotics pretty helpful too, although it's "gram-negative" (so have a really robust wall) which means detergents, penicillin, some defences of immune system, etc can't affect it. It's a tough SOAB. Prevention is definitely better than cure.

    It's up there on the nasty things that lurk so leave it alone, like Anthrax.

    If only people globally, would stop eating "bush meat"!

    Wild game is my staple, Moose, Deer, Rabbit, Bear, upland game birds and waterfowl. I don't trap anymore because the prices are gone to sh!t. but when I did, I ate lynx and beaver as well. I eat very little domesticated meat because its garbage imo and I have no way of knowing how it was handled. I do all my own butchering. Never heard of anyone in my neck of the woods getting the plague and doubt I ever will.

    There are several forms of plague. Bubonic, causes the big swollen boils around lymph nodes and is spread by flees that have bitten an infected rodent. Prairie dogs and armadillos are common carriers in the US. Pneumonic is a respiratory infection believed to be airborne to some extent. Septicemic is a blood infection. Plague was a bad deal. There was a saying that people could be dancing in the morning and dead by noon during the plague pandemics (there were several). They don't know for sure if Yersinia pestis (plague) was the only thing contributing to the death toll, there might have been multiple diseases going on at the same time since one of the diseases that was nearly 100% fatal more closely resembled Ebola in regard to symptoms and quick death. Really interesting history. I would like one of those bird beak masks that they would wear with fresh herbs and flowers in them to protect from the "miasma" that they thought caused it.

    It's very hard to resist the temptation of defining it based on my own cultural and personal persuasions, so eating beef steak is ok for me but clearly an opinion less widely held in say: India.

    I'd suggest not eating carnivores as a starting rule, which excludes any bear sausages you might have in your freezer. Think bush meat is a subjective term

    Understood, I was being lazy and using "plague" to mean the black death in Europe peaking in 1660s, which is assumed to be mostly Yersinia. Again subjective... if you were a First Nations person you may regard measels, flu, smallpox brought by Europeans etc "plague" (from more recent history)
    I agree with you on the carnivores, I am not actually that fond of bear meat, sausage is ok, I usually only take a bear when it becomes a nuisance. I have friends that just love it and a native friend of mine who can't hunt. I take a bear for him occasionally, I keep all the fat though, bear fat rendered is the best fat you will ever taste. Bear meat you have to make sure it is cooked very well, any other way you run the risk of trichinosis. I agree, bush meat is a subjective term, that's why I asked for your opinion of it. In some cultures primates are on the table, never could I do that.

    Bears are omnivores though, so a little different than say eating mountain lion or coyote. I have heard they are greasy like racoon (also omnivores) which some think are great. I think the strangest wild meat I have had was groundhog (unknowingly). I used to trap too when fur was worth money, and have heard muskrat legs are supposed to be good and beaver too if prepared right. There are a lot of potential diseases though, even in domestic animals hence the regulation of meat industries and health recs for cooking temps. Processing can be another thing too, especially with some of the hemorrhagic fevers now found in some of the deer populations here. That is kind of scary, no human cases that I am aware of in the US, but there have been some poultry to people influenza viruses that have caused Ebola like hemorrhagic fevers in (you guessed it) China...They never were able to spread communicably though, while it killed the humans, they were a dead end host for the virus.

    Yup, I know they are omnivores, bears are greasy, I find a spring bear a little less greasy than a late fall bear, probably because they just came out of hibernation, depleted their fat reserves and are on that sweet grass a lot in early spring. A fall bear is what you want for the fat or some people call it grease when rendered down, the fat on those is thick. Never had groundhog or muskrat, have trapped rats though. Beaver is excellent, almost like pork, the first 5 or 6 inches from the base of the tail is to die for, but that part is very rich. In some parts, porcupine is table fare, I have had it a couple of times and had an old timer show me a cleaning trick to make them taste a bit better. They aren't horrible but not something I'd order in a restaurant if you could. lol I am not too worried about contracting a disease from under cooked meat. Everything I eat is very well done, I don't eat it any other way. I have been laughed at by many for not eating meat that wasn't well done. LMAO.

    I always wondered if your user name was a combination of Montana and pockets like a "pocket set". I wish fur prices would go up, I might need to trap some rats this year at my fishing lakes. They are getting pretty thick again and collapsing the banks. The lakes were from rock mining, but are not very deep and have islands separating fingers. They keep tunneling into the islands then they collapse and flatten making the channels narrower and shallower.
