So I take metamucil a couple times a day to keep things regular on such a high protein diet. Do I need to log this? It's sugar free. But it's still carbs, right?

Whatever you do, be consistent. I don't use fiber to drop net carbs when calculating macros. Can you? Sure. Many food products do just that. I prefer to slightly overestimate my calories, especially when dieting for weight loss.
