You won't really know until you pick a number and run with it for at least 2 weeks.
You can make an initial guess using a TDEE calculator and then reduce it slightly if your goal is fat loss - or increase if you want muscle gain. It's better to be close to maintenance if you want an accurate answer - or close to what you have been eating most recently.
So say you lose 1lb in the 2 week period, it means that on average your calorie intake was 250 cals less than your TDEE.
