    Bourbon and ground peppercorn reduction then add heavy cream and reduce until fairly thick. Dip warm bread in it too. One of the best sauces I’ve ever had, I lick my plate if I make if by myself srs. Having a filet, crab cakes, asparagus and that sauce tomorrow. If I remember I’ll post pics

    Not really a fan of sauce on steaks but I guess bernaise is okay

    Sometimes I use egg yolks as a kind of sauce when I have steak for breakfast




    Steak sauces that come in a bottle like a1, heinz 57, or worcestershire sauce are disgusting and people who eat them have broken taste buds.

    Came in to say Bearnaise - we make this a lot when having Tenderloin for dinner. Otherwise, I think a good filet with some salt and pepper is its own reward. Thyme butter can be good too.

    Brown veal bones in oven add to pot
    Caramelize carrots, celery root, onions In pan from browning bones, add to pot
    Add equal parts port and red wine and simmer, add thyme bay leaf and green peppercorns
    When alcohol is cooked out add chicken stock until bones are floating and slowly simmer
    When it gets thick enough to coat bones and stick ~ 2-3 hours strain, further reduce by about half. This is the Demi and should have enough to make several batches of sauce


    Start again but this time when you get to stage of adding chicken sauce also add some Demi glacé. Then after straining and reducing when you get to sauce consistency grate or add in sliced soaked bone marrow to emulsify into sauce.

    Yes, generally agree. But sometimes some cuts of beef are passed off as steak when they're really not, and become almost inedible when cooked. If you have the misfortune to be given such meat, then some sauce might be necessary. But ketchup really is beyond the pale.
