I actually love bean sprouts and spinach BUT, lately I've been kind of off plain spinach unless it's sauteed and seasoned, and usually with something else added to it. Plain raw spinach doesn't do much for me texturally. Also, bean sprouts are amazing with soups/Pho... but alone I don't really too much for them... With kale and romaine, I need to add LESS to them in order to make it interesting...

This. I also completely agree with your reasoning. I feel the same way about spinach. Bean sprouts soaked in hot chili oil oil are one of my favorite things in the planet in a good pho/ramen/soup dish, but they need a lot of soaking & have almost no place in any other meals.

Agreed on the bean sprouts... i freakin love piling them on in PHO with those sliced jalapenos and covered in sriracha.

Spinach just gets too limp (teehee) and odd in texture unless you pair it with something, BUT it adds a great hearty flavor if you lightly sautee and add it to wraps, burritos, or on pizza/in pasta dishes.

I have a thing with 'crunchy' veggies and kind of stay away from the ones without a significant firmness.

I’m the exact same way. Last night I put some broccoli in the air fryer & bro I swear I had to force myself to stop eating because it was so damn amazing! I would’ve eaten a whole tub if I didn’t know the horrific repercussions it would have on my bowels to put down over two bags of broccoli in a sitting lol
