    Clearly this. Also, when I was a kid my best friend's dad was from the Philippines & he used to make a dish with chopped up fried spam, eggs, sauce, and rice. It was an incredible savoury, spicy sauce that was so amazing it made me completely forget I was eating canned mystery meat.

    I suppose that's where frying it comes into play in so many Pacific Island dishes. It definitely removes the slimy texture.

    I actually knew a guy who lived for awhile in Austin, MN where the spam factory is. He said the whole town is well-known for its distinctive smell of death because so many pigs are slaughtered there. Apparently, about a decade ago a handful of workers there developed a strange neurodegenerative disease because they breathed in infectious aerosols from the pigs' brains. These specific workers had the duty of chopping the pigs' heads off and scooping out their brains to be sent to China and Korea, where they're popular in stir-fries. Dat dere coronavirus out there is far from the first illness to jump from animals to humans. On an unrelated note, I hope the rest of the pigs' heads were disposed of somehow instead of yknow...being used to make Spam. Food for thought ¯\_(ツ)_/¯
