Anyone got any ideas of the best sources of protein and how much of it I need to eat?
Currently I'm cutting so low carb sources is preferred, but would also like some ideas for when bulking? A rough Google shows stuff like tofu having a 3rd of the protein content as chicken, so how do I get the same protein supply without the extra calories?

There is no need to be low carb to cut. In fact, it will make it harder if you are going vegetarian because most plant based sources combine carbs and protein like lentils, beans, chick peas, grains, legumes etc.
And if you are going vegetarian because of ethical reasons then that's your choice - but if you believe it's because it's healthier - I would have to disagree. It's easier to construct a healthy diet from mixed sources.

Vegetarian is super easy. Eggs and dairy are great sources of protein. And if you are watching calories then lowfat or nonfat dairy is available.
And if you add stuff like lentils, beans, quinoa etc plus just the trace protein found in pretty much everything else, protein will sneak up on you and you will most likely get enough unless severely restricting calories or making some really weird choices.2 time survivor of The Great Misc Outages of 2022

This. I don't eat meat & I have no problems getting enough protein from tofu, lentils, beans, nuts, oats, bread, yogurt etc. Even if you don't consume enough protein because you're eating low calories & making bad food choices, just dump some whey protein into some plain nonfat Greek Yogurt & you got yourself almost 40 grams of good-tasting quality protein.

This times a million, just thinking about the overflow of fiber from a vegetarian lifestyle makes my stomach cramp. I've never personally seen a vegetarian(a real one) reach anywhere near their genetic potential without using gear. The amount of food/shakes you have to intake just to reach sufficient protein is insane.
Carbs are our friend and necessary for gains/healthy body. I wish this low-carb fad would stop already.
