Do i need to do squats if i do deadlifts 3x a week, bike up a giant hill to the gym 3x a week (burns like hell in the quads), and run 2x a week?

Personally, if you are trying to get bigger legs I would 100% incorporate squats into your routine. Deadlifts are important and do work parts of the quads and hamstrings but squats have more of a full range of motion movement which really puts extra emphasis on the legs to make them stronger and bigger. If you have never squatted before just start off with the bar and increase weight as you feel you need too.

If my small anecdotal experience means anything, this is completely true.
I have a borderline-pathetic squat for my weight and the amount of time I've been lifting, while my deadlift is not bad at 415 maxed and 345 for reps. My posterior chain is well developed, but my quads are somewhat lacking and my deadlifting strength does not at all seem to translate into a squat for some reason.It says I am 49, but I am 23.
