Good afternoon guys I just graduated from a police academy and I’m working in an urban environment. I’m 31 years old, 5’10 160. I have decent definition but I need the size. Any help would be appreciated. I feel self conscious in my uniform. Thank you for the time guys

Make sure you eat a lot of meats and protein, eat more calories than burning so put on the weight. Drink protein shakes, eat protein bars, supplements like Creatine helps, take vitamins.
For bulking up and adding a lot of weight to your frame, most people have the most room to grow actually in their lower body. Anytime I go to a health club everyone seems to want to do upper body, specifically chest & arms. and they will neglect their lower body or not train it often enough. I mean if you look at powerlifting, a lot of the lifters continue to progress into higher numbers on the deadlift and squat while stalling on increasing their bench press up, they are able to continue adding muscle mass and strength to their lower body while struggling with the upper body.
So for bulking up any routine that has a focus on your lower body. Fierce 5 is a good routine on here. Arnold's workouts are great you can just google them. Some hybrid powerlifting routines that are a mix of bodybuilding and powerlifting are good. I like routines that include a lot of supersets, get more done in less time.
