    Fried chicken!!!

    I have been doing IF for about 8 months and the only challenge I find is getting in the protein I want at each sitting. Considering I only eat 2 meals a day with a snack sometimes.

    I have come upon one of my favorites making homemade chicken nuggets. I eat these 2 sometimes 3 times a week. Never has eating chicken breast been so easy. I can easily knock down 12 sometimes 16 oz of chicken like this (if my son does not steal too many )

    2lbs of chicken makes about 3 plates similar to the pic below.




    Easy as can be.

    I cut chicken breasts in 1/2 horiz and use a needle tenderizer and puncture the hell out of them.
    I then cut to nugget size pieces and put in a bath

    1-egg
    3-5 tbs siriacha
    cayanne pepper
    1 tsp salt.


    I let the chicken hang out in the bath while I do my other prep. I have even refrigerated for a few hours for even more taste.


    I then make my breading
    I take 1.5 cups flour
    1tbs baking powder
    2 tsp salt
    black pepper (by eye)
    Chili powder (by eye)
    Black pepper (by eye)

    I put this in plastic bag to make coating easier.

    I drop 5-7 pieces in, shake bag around a little and repeat until all the nuggets are coated.



    I heat canola to 375 and monitor temp as I fry with thermometer (critical). I use peanut from time to time. I go back and fourth as to how big a difference it makes.


    Anyway....I drop pieces in hot oil a few at a time and cook batches for approx 3.5 min.



    Out of the oil, they get

    salt
    Cayanne
    paprica
    chili powder
    garlic salt
    black pepper


    Depending on how much I eat, It accounts for 70-90g protein at one pop. I could eat more and usually have to stop myslef and I will have a yogurt as well or some fruit. But needless to say.

    Fried chicken is awesome!

    I have been searching all day for the Fried Chicken thread.

    That looks pretty good, ID and a good way to do it.

    This is the only way I can eat chicken breast. But, I would eat your chicken

    I fry chicken breasts by taking the breast meat (1/2 breast) and butterflying it to make it uniform in width.

    I have 3 shallow bowls - one with flour, one with beaten egg and equal amount of buttermilk and the last bowl with Panko Bread Crumbs (add s/p and garlic powder).

    I use an iron skillet or a thick gauged pan to fry and put about 1/2 inch Canola oil. I then bring the oil to temp, cook about 3 to 4 minutes per side, careful not too over-cook.

    I then make some cream gravy and eat with brown rice.

    Awesome.

    I dont do the flour, but similar egg bath and breadcrumbs.

    Just italian seasons bread crumbs, parmesan cheese, and garlic salt.

    I cook in coconut oil with pam to coat any dry spots. I dont fully "fry" but just enough oil to saturate breadcrumbs enough to brown.

    Sounds messy/lots of dishes. I'll be having some skillet seared spicy garlic tilapia tonight and a big salad of Romain with olives and fresh grated parmesan cheese. Pretty much grilled only this time of year for other meats. My BIL grilled some pickle chkn Sunday that was amazingly good. Apparently that's a "thing" in the south, I'd never heard of it. Marinade chkn in pickle juice then grill. Surprisingly very good.

    I dont mind cooking when it tasts this good. Sure there is some clean up , but it is worth it! The chicken done like this can be frozen individually and then put in a large freezer ziplock. THen you can take it right out of the bag and put it in a pan to reheat. It is almost impossible to tell from fresh cooked.

    The above is also AWESOME cold and left over out of fridge. When I used to eat more bread, you can make some killer sandwiches out it. If I am really feeling carby, I cook some pasta and eat with sauce!


    As for the pickle thing, I have marinated my nuggets in pickle juice. Adds neat touch. But most of the time i am too lazy

    HA! I am a sucker for fried chicken legs. No one except my son likes "real" fried chicken as much as I do. So once in a while I will pick up some Bojangles fried chicken for us. (best biscuits ever!). I get a breast meal with fries and then I ask for 4 legs The legs are the BEST!!!
