    Keto Mayo

    A healthy organic no-inflammatory mayo you can indulge in every day. This takes about 2-3 minutes to complete, and that is including finding your ingredients and getting out your blender. Goes great with a hard boiled egg and if you use pure mct 8 you might even get a little "pick me up" boost before workout.

    Use a blender/stick blender to mix well for speed and ease of emulsification, or by hand if no other choice.

    You need:
    • 60 ml or 4 tbs of Mct 8 or 10 oil - or use a blend of both
    • 180 ml/12 tbs Virgin olive oil or in a pinch avocado oil
    • 1 organic egg
    • 2 or 3 tbs of lemon juice or lime juice
    • Half a table spoon of dijon mustard
    • A pinch or two of sea salt
    • Fresh ground pepper if you like - you can skip pepper
    • Half a tbs of vinegar this is purely optional - only add vinegar if you like your mayo tangy

    Add the egg yolk to your blender, and the mustard. Start the blender to mix. Slowly add the oils while blender is running. No rush or it might split. When you added all the oils and the color and consistency looks like mayo , then you add the salt, and lemon juice. Taste and adjust to own liking of something is off.

    Note: Be careful and start the first whisk with only egg and mustard. Then add oil. And salt, pepper and lemon at the end of the process. (vinegar for those who like their mayo tangy goes at the en as well)

    Traditional mayo is fundamentally keto and non inflammatory. No need to invent 'keto' mayo when regular mayo is pretty much olive oil, egg yolk and mustard.

    Yea. Full fat mayo is like 7 carbs per 100g where I live.

    100g of mayo is a lot.
    I have a good joke about water retention. But I'm going to hold onto it for now.
