So let’s say my body needs 2000 calories if I do nothing.
If I lift and eat 2300 calories a day, will I lose fat? Assuming the 2300 is all grilled chicken breasts, tuna, shrimp so no carbs or fat, sugar.
Will I lose fat that way?

If you eat more calories than your body needs for that day, you'll gain fat.
If you eat less calories than your body needs for that day, you'll lose fat.
If you need 2000, eat 2300 and you lift intensely, you're probably going to stay in maintenance because of the calories you've burned in your lifting session. Would I rely on that? No. Just eat at 2000 and take the calories burned in your lifting session as a 'bonus'.
