    I've been cookin steak for 18 years, my favorite way is:

    For 16-20oz steak
    Fire up the grill and hit 300-350*F
    Steak on grill for 7-8 min
    Next side 6-8 min
    NEVER flip more than ONCE. This goes for chicken also.
    Also keep the LID SHUT and the heat LOW so it maintains temperature but doesn't catch fire.

    Cut it somewhere, you want a warm pink center (medium).

    Any rarer and its risky. I deal with bacteria every day, autoclaves and growth dishes are my specialty, you want them all dead as can be.
    I'd even sprinkle some antibiotics on it if I had some to waste.
    'Bacterial death smell' is often incorporated into foods we love and enjoy. Some foods wouldn't taste the same without the dead bacteria.

    I realized this one day when I was in the school cafeteria talking to an 18year old indian chick, she was nuking some home-made food she brought.
    And it smelled exactly like B.Cereus does when it comes out of the auto-clave dead.

    You have to let steak come up to room temp or you get that distinct line between cooked outside and raw inside.

    T-bone medium-rare to medium.

    Top sirloin should be rare, medium at a max unless you want jerky.
