    Monk Fruit Extract

    I have been using Stevia for years now. I haven't used any kind of sugar since I started using Stevia. But is somethings, it just doesn't work. Or it takes too much of it to offset the cost.

    I found a bunch of recipes using Xylitol, Erythritol, and others. But I prefer all natural whenever possible. Which is why I have been using liquid Stevia extract all this time.

    Anyone here use Monk fruit extract and can recommend a good quality maker? Powder or liquid? Uses and when not to use?

    It's awesome.

    150g (or one regular sized Haas Avocado
    4 Tbsp Raw Unsweetened Cacao
    4 Tbsp Monk Fruit
    2 Tbsp Coconut Milk (Cashew, Flax, Almond, whatever)
    1/2 tsp Vanilla Extract
    1/4 Tsp Pink Himalayan Salt (or whatever salt you prefer)

    First crush down the Avocado with a spoon to remove all chunks. Then add all the ingredients, mix into a paste. Then Beat with electric mixer until smooth. Comes out like a thicker Chocolate Moose. Absolutely delicious.

    *Pro Tip - Add 2 Tbsp Natural Peanut Butter and live like a King!

    i juggle back and forth between stevia and monk fruit. Depends on what im doing, i have a small stevia concentrate i use primarily for my green tea only. The monk fruit i use for recipes and what not. I got it from wholefoods... 1 thing ive noticed, is i been making these Cacao Peanut Butter cups with it. They are really good, but the monk fruit doesnt really disolve and liquify which gives it almost like a nestle crunch kind of texture. Its still good but i might look for an alternative that dissolves a bit better.
