    It affects a LOT. Recent studies in microbiology linked to physiology suggest that our intestinal flora have a MAJOR impact on many things, both physically and neurologically. The Digestive system is the second brain. Pretty interesting stuff as one of my degrees is in microbiology. They have found that fat people vs thin people have statistically similar fauna, respectively. They have a major impact on nutrient assimilation. It all makes sense considering we have many more bacterial cells than we do human cells...

    Maybe a digression but I've yet to read anything about lung flora, that's warm damp and huge surface area, surely there's something going on there too? (albeit a lesser significance to gut flora)

    No, immune system would kill those. Many of our normal biota can make us sick if they are in the "wrong place".

    well truth to be told i dont know what kind of kefir you have in USA but the one in Croatia is sour as fuk and its the real chit. I tried the one in USA from various makers and to me is like milk with sugar.

    Making it is the way to go. I finally got rid of mine but you can buy the starter and put in some milk and it will go slow in the fridge or faster at a little warmer temps. Originally it was made in the Middle East in goat bladders, hung from the door so it would get shaken around each time someone came in or went out. I was making mine pretty tart. Sometimes I’d forget about a mason jar of it I had going and it would be like cottage cheese . Add a little whey protein, fruit, mix it up and it was like hardcore yogurt

    That’s where I got my starter. You can just keep making it with the same “grains” it grows since it’s essentially a big ball of bacteria. Needs at least a week or more made in the fridge. I wouldn’t recommend making it at room temp. Can use regular cow milk, goats milk is supposed to be better, but I never tried it....Basically the culture just metabolizes the lactose etc.

    I'm in Canada. Even the organic one is pasteurized I noticed. Tried it daily for a few weeks and didn't notice a difference. Then I read if its pasteurized, you may as well not bother as the good bacteria are gone.

    Might consider finding a farmer who will sell me raw milk and making my own. What benefits have you noticed from it, if any? Seems more like a preventative maintenance type deal.

    If the store-bought says live and active cultures, then its just the milk that is pasteurized prior to making the kefir, which doesn't matter. No, I have not noticed any observable benefit when I was consuming kefir frequently, but I was also eating a lot of Greek yogurt at the time as well. I think it would be more important after a cycle of antibiotics where much of your natural flora would be killed off along with whatever they were prescribed for. I buy store-bought with live and active cultures for my kids the couple times they have been prescribed antibiotics. Pretty much always have a jug of it in the fridge, they will drink a little occasionally they call it "special drink" usually just give them a shot glass of it, otherwise they drink a little and lose interest since its pretty thick.

    Thanks for the lesson, maybe i'll pick it up again as I liked it and it did say live and active cultures. Don't feel like making my own anyway lol. My breaky mon-fri is 500g of organic greek yogurt for the past 3-4 years.

    Look for President's Choice Kefir products. I tried the milk one, but it's too sour to my taste.
    Im currently using this Coconut Milk alternative and it's hnnggggg


    Also adding sauerkraut and pickles to my diet, unfortunately I didn't look at the labels and bought the ones with vinegar which kills all the bacterias lol
