    low and slow ribs, wrap or not?

    I've read that you should generally wrap ribs and not put them through the stall. While I've let ribs cook to 190 without wrapping them (about 7-8 hours), the barque wasn't the most satisfying. I'd imagine the barque helps out a roast a lot more than ribs unless you coat the ribs right.
