    Interested in Cocounut Milk alternative for Curry

    I'm looking to make a batch of curry tonight with what I have on-hand, but I'm interested in any suggestions that do not require coconut milk... that's the one thing I do not have. Has anyone used other forms of milk for curry? What was your experience, and what did you use?

    I'll use olive oil to cook the vegetables / meat, then add half and half in later after i've lowered the temp. I haven't used coconut milk unfortunately so I cannot compare, but it's still very good. I have noticed I prefer green curry above red

    OK, cool. It seems like as long as you have a fairly rich type of milk to use it tends to make a similar taste/consistency... that's what I'm hoping for anyway.

    You can make a more Indian style of curry by cooking in tomatoes and either using cream towards the end or a little natural yogurt if you wanted a meal lower in fat.

    Yep, coconut milk is more of a Thai curry thing, I prefer the Indian variety so I always use cream.

    Yep, if i do an indian style i use half and half or whatever plain yogurt i have. I save the coconut milk for thai style yellow curry.
