what's the difference between boiled chicken and poached chicken. what to add in the water to make it actually taste somewhat decent?

what's the easiest way to boil (poach) chicken to cook it perfectly (moist)

I add garlic powder, onion powder, salt, pepper and a bay leaf. You can use fresh garlic and onion, I don’t because I don’t have a garbage disposal and it’s easier to clean up using powder. Add enough water to cover the chicken an inch above the top. Bring to a boil and then simmer on low for 15 minutes. Boiling the entire time produces tougher meat.
I use poached chicken in other dishes like salads, soups, burritos/taquitos, pastas... so it isn’t flavorful enough to eat on its own but it is versatile and very moist.

Just get the kind of thermometer with the cord on it, set the alert temperature, 160, and pull it out of the oven as soon as it reaches that temperature (it continues to cook for a few mins) and your chicken breasts will be fine. Even better if you pound them flat, otherwise the thin part gets done faster than the thick part. This looks nearly identical to the one I have:
