I weigh myself every day and average out at the end of the week as I prefer that way than just once a week.
I weigh myself in the morning same time every day but here's the thing, I eat all my calories after 4pm and end eating around 9-10pm, weigh myself next morning at 6am (I prefer eating this IF way I just enjoy eating when im at home)
When I weigh myself at 4pm when I get home from work it's always lighter than the mornings weigh ins. The only thing I drink during the day at work is a sugar free white monster and some water but yet I weigh less at the end of the day.
Should I be tracking my afternoon weigh in since I eat so late at night?
I am writing both down in a notepad anyway to track progress but when averaging which should I go off?

You could always just add them all and average haha.
I weigh in each morning but mostly just out of habit and curiosity. I only really put stock in the weekly weigh in on Saturday mornings. My weight stayed exactly the same on Sunday, Monday and Tuesday mornings despite eating at 1800kcals a day but tomorrow I'm confident I will have lost another 2lbs because my Wednesday, Thursday, Friday morning weigh ins have seen losses.
Your body does odd things day by day, just pick a day / time that you prefer to weigh in and be consistent with it, I would recommend mornings though after you've used the bathroomFeb 11th: 82.9kg | Mar 11th: 80.3kg | April 15th: 76.4kg | May 13th: 73.5kg | June 10th: 70.6kg | Sept 10th 70.6kg

It doesn't matter as long as your consistent with when you do it. So, everyday around the same time.
The purpose is to take the WEEKLY averages and monitor the fluctuations.
If you had a binge, though, do not weigh yourself for 48-72 hours.
I, for example, weigh myself as soon as I wake up, before anything else. This is because I have a sporadic eating schedule so I may eat 1000 calories for breakfast one day and then 0 the next. So before any food is good for me that way I dont have to keep meals consistent or anything since I do not have set eating times or anything.Fierce 5 U/L Workout Log: https://forum.bodybuilding.com/showthread.php?t=173977781&p=1493098341#post1493098341
