Recipe:
1. Preheat oven to 350 F. Line a 13x9 pan with parchment paper and spray with nonstick coating.
2. Whisk together 2 eggs, sweetener (I used 1/3 c Truvia), 2 tsp vanilla extract, 3 tbsp cream, and 1 stick of butter (melted or softened).
3.In a separate bowl, mix together 3/4 c almond meal, 1/4 tsp salt, 2 tbsp cocoa powder, and 3 scoops of chocolate-flavored protein powder (I used this in place of chocolate chips).
4. Combine wet and dry and spread this cake-y batter onto the pan.
5. To prepare the cheesecake layer, whisk or beat together 8 oz cream cheese (softened), sweetener (3 tbsp Truvia, here), a pinch of salt, 1 egg, and 2 tsp vanilla extract.
6. Pour runny cheesecake batter on top of brownie batter and use a knife to swirl the former into the latter.
7. Bake for 30 minutes, or until a toothpick comes out clean.
These are the best keto brownies I've made thus far and by far the lowest carb.
Nutritional info (using Myprotein Impact Whey Chocolate Smooth) for 1/12th:
