3 tablespoons butter 4 cups thinly sliced zucchini (about 3 medium) 1 large onion, thinly diced 5 large eggs 2 teaspoons dried parsley flakes 1/2 teaspoon salt 1/2 teaspoon garlic powder 1/2 teaspoon dried basil 1/2 teaspoon dried oregano 1/4 teaspoon pepper 2 cups shredded mozzarella or Swiss cheese 2 teaspoons prepared mustard 6 strips bacon, cooked and crumbled.
Sautee zucchini and onions in melted butter. In a mixing bowl, lightly beat eggs and add mustard and spices. Add the cheese and zucchini/onion mixture, along with the bacon, and mix well.
Pour into a greased round baking dish (or a ghetto, dollar store foil pan, like I did), and bake at 350° for 25 minutes.
