I usually hate the race victim mentality but the original guy who brought it up has a valid point.

Never ever when a white person does something wrong is it ever a projection on white people as a whole - and it shouldn't be. It's always "mentally unstable" yet race and religion is always brought up when it's a non-white person. Is this incorrect? There is a double standard when making projections on outliers depending on their skin colour.

That's because when a white person does stuff like this in the West, it is so rare and out of place that "mentally ill" is the word most convenient to describe it. People would not be as surprised if it was a black, or mexican pulling stuff like this. it's as if behavior like this would be considered "normal" in men of those ethnicities. I do agree with you that the term double standard has been ruined. Sort of like how sjw's will say "double standard" when they say women who have kill counts of 100 are called sloots and men with the same numbers studs, etc.

However, there are specific types of crimes that white people are more associated with yet they do not get stereotypes attached to them. The same cannot be said for non-white people. E.g. no one sees a white person and thinks "cot daym it, another school shooter" yet all sorts of stereotypes are thrown out when a non-white person commits a negative outlier of an event.
