If i was to lose 12lbs of fat and then pack on 12lbs on muscle would my joints recognize the difference ? Im thinking that 12lbs of muscle would be easier on joints/body then 12lbs of fat but im not entirely sure...

Muscles only do one thing. They contract. They don't push. That means your joints will be subject to the same weight, however, connective tissue is also strengthened with exercise and so the joints are more likely to be held in a proper position meaning less joint problems.
Exercise isn't diet. Diet isn't exercise. Defiantly building muscle.

This is just a halfass guess, but atrophied muscles can be associated with low bone density and weak joints from poor nutrition, and the opposite for hypertrophied muscles. So in a manner of speaking, high muscle is easier on the skeletal system than high fat.
