I don't love Sours so can't help you there.
Best IPA's in the Tampa metro in my opinion are at Cycle (Crank), Cigar City (White Oak Jai Lai), Cage (they had a few good ones with names that had king and/or queen in them, mango IPA), and 7venth Sun (Mangrove is the flagship but they had a hazy one last time I was there, name is escaping me).
On a side note, in Nashville for work and the small brewery Southern Grist is putting out some RIDICULOUS IPA's

yep - homebrew and that's Owen our Labrador. He's got a lot of Fox Red color which looks cool imho.
brewing another dipa tmrw morning. Citra & a little Centennial in the whirlpool then Vic Secret & Huell Melon in the dry hop. Cant wait to see how it comes out - I've never used the last 2 hops but I hear good things. Hoping for fruity/citrusy. 1056 yeast - TF Pearl for malt.bmbc

DH contact time is always a debatable subject for sure. I find myself torn between trying to get some biotransformation of hop oils and keeping contact time under 3 days. I'll try my best to shoot the gap on this batch and hit it heavy in 1 dose to minimize oxidation.
Do you have any best practices to share? 3 Mags by all accounts is an absolutely outstanding brewery and I always enjoying learning whatever I can!bmbc

Hey thanks for the compliment! My only advice is really leveraging CO2 for all it's worth. Purge anything and everything you can, kegs, tanks, carboys, lines, etc.
I even knew a home brewer who would put his leaf hops in a locking cooler and purge them, prior to dry hopping.
As far as what we do in the brewery, pellets added while fermentation is just starting to subside, pellets. One week of contact. Then rack to brite.It's your diet.

you bro's are kill'n it. i hate my chitty local beer scene so damn much. it sucks not ever having anything worth a crap to share. there has been like 11 new breweries to open in the last year or two and not a single one knows what hops are... legitimately unbelievable in this day & age; it's like we're living in a time warp or something. the local newspapers and idiot Fat Tire drinkers rave about how good they are and all I can do is shake my head.
if it wasn't for Fuji look'n out for my poverty azz I'd barely know what all these awesome hop snacks taste like.bmbc

I had dinner at my folks place last night and my brother brought over the Rogue Voodoo Doughnut Grape Guerrilla.
It tasted just like grape soda; Was not a fan nor am I a big fan of Rogue in general.
