Coffee brewing, any style, is a matter of extraction. Extraction is influenced by the type of bean, roast level, grind size, water type, water temp, brew time. So it's super-complex, potentially. Here's a primer of how these affect extraction:

Bean - dense beans will extract less. They can be dense because of origin, or roast level (darker = less dense).

Roast level - as above, lighter = denser, darker = less dense

Grind - finer extracts more, coarser extracts less

Water type - different components in the water have an affinity for different components in the coffee. Distilled water is utter crap, hard water is also crap. Crystal Geyser is generally in the ballpark, Fiji tastes GREAT, or these guys are here to help you: https://thirdwavewater.com/

Water temp - hotter extracts more, cooler extracts less

Brew time - longer = more, of course; shorter = less


So take a dark roast. It's already less dense, so imagine if you ground finer and brewed at 212 degrees. It would over-extract pretty bad. If you grind somewhat coarser, and brew at 195, it might taste much better. Conversely, an uber-light nordic roast: if you grind coarse and brew at 180, you'd get something resembling green tea, lol. Grind finer and raise the temp and it could taste awesome.

The point isn't to get lost in tweaking parameters, the point is to understand what effect different parameters have. If it tastes sour, and it's a light roast, grind finer and brew hotter. If it tastes burnt, maybe it's some crazy charred French Roast, in which case it is burnt, but if it's not? Grind coarser, brew cooler, it should taste better.

Try not to change more than one parameter at a time!

10/10 post. As soon as i read "if it tastes sour" i immediately remember the taste i had earlier. And how today the darker roast ive got tasted 1000x better after letting sit.

200 for me, it seems like if it’s slightly under 200 it doesn’t change much. I’ve poured it as cold as 185 And still tasted great.

I definitely need to let my electric kettle get to a rolling boil and let it sit for a solid minute or two easily then. Thermometer incumming.

Yowza. Thermometer finally came in after getting caught in my mail forwarding. You were right poison. This kettle gets to a rolling boil (around 220) and doesnt fall below 200 for a solid 6-7 mins. Made today with 200* and totally different flavor profile. May let it cool down a little more tomorrow.

New crop coffee in. This stuff is wild, doing a fantastic imitation of a natural process Ethiopia. It's a fat basket of fruit, with loads of blueberry, strawberry, manho, watermelon, florals, etc. Amazing stuff.
