Lateral raises is an isolation exercise which is not taxing CNS , side deltoids is a small muscle group to recover fast and lateral raises can be a good exercise for width especially when they are performed correctly . So side laterals can be performed every 2-3 days with sets of 2-3 up to recovery . There is a misconception of definition or shaping among most people . Isolation exercises are used to get over imbalances in muscle groups by causing hypertrophy in lagging muscle groups and after muscle groups are balanced make an illusion of sharpening or definition.

you get bigger and wider shoulders from making all 3 heads of them grow. a balance of presses and pulls with a steady progression, then adding in isolation exercises like side laterals and reverse flys to get what the compound lifts didn't
i jerk, you clean.

You can hit any muscle every day but the volume has to be low. The problem is you can't work intensely enough. If you do you'll need more than 24 hrs. to recover. What you CAN do is throw in a set of lateral raises at the end of every training session but still have 2 days a week where you're doing your raises intensely and with volume.. This is how I treat any lagging bodypart and it has always worked well
If you don't get what you want you didn't want it bad enough

Twice a day at least! Just kidding. Lateral raises are great, and can be a good part of your shoulder development. Now I would do it no more than twice a week add them to your shoulders workout. If you workout your shoulders only once a week, than add them also after your chest workout. For bigger shoulders I would stick with military press, smith machine shoulder press, dumbbell press, Arnold press.
