Is it realistic for me to go from struggling to do one pull up to being able to do 8 in a year?

Must have gained some day and lost some muscle. Do lat pulldowns and back workouts and keep trying weekly. Once you get one your golden.

Of course!
It won't take you long. When I first started going to the gym about 5 months ago, I couldn't do a single pull-up! Now, I'm able to do 7-8 each set.
To start, just go for 1-3 repititions but attempt full range of motion and slow movement as it will give you strong formation and you won't be sloppy and will improve greatly over a short period of time! Just keep at it
