Curry fries are golden yukon potatoes cut into thin french fry shapes. Toss in enough olive or coconut oil (I used 15g oil for just shy of 900g potatoes). Toss in curry powder, cumin, spicy mustard, garam masala, 1/3 cup tomato paste, garlic, chili powder, and squeeze of lemon.
Pudding:
1.5 cups steel-cut oats
6 cups water
1 cup milk
3 whole eggs
Brown sugar to taste
sprinkle of salt
2 TBS butter melted
zest of 1 orange
little nutmeg
Preheat oven to 300F with 1 TBS butter
Toast steel cut oats on a sheet pan for 20 minute, stir frequently for even browning
In a medium saucepan ove high heat, combine oats and water. Bring to boil and then reduce heat to simmer. Cook, uncovered, stirring frequently for 20 minutes or until the liquid is absorbed.
In a bowl, whisk together milk, eggs, sugar, 1 TBS of butter, nutmeg, and orange zest.
Add the cooked oats in separate parts (to prevent the eggs from curdling). Stir until fully combined.
Pour this mixture into a pretty large bowl such as the one in the pic or a big casserole dish and bake for 45-50 minutes.
