Not sure if this helps any but last night I was feeling really REALLY lazy so sauteed some mushrooms, cooked up a lb of ground beef, mixed together and mixed in some cajun seasoning. Kind of an odd combo but worked pretty good for my taste buds.

Sometimes just throw together whatever you have and sometimes it works out.

Hey sorry just now seeing this!
I only eat one of these a day, i eat light during the day so i can have a nice dinner. The amounts of the food are based on my personal macros. If you use FitDay it will let u calculate the %'s and modify foods and create. I always modify anything with carbs to the net carbs so doesnt count against my %'s.
For those recipes you just add stuff till it meets your taste and macros.
I dont know how you have a hard time over carbing with all the meat and cheese available lol like j1akey said just throw stuff together that you like and hope for the best. My favorite so far is the following

    Chive & Onion cream cheese servingx2 160 14.0 4.0 4.0
    Garlic, raw- 3clove 13 0.0 2.8 0.6
    Ground Turkey Breast serving 120 1.5 0.0 28.0
    Light Sour Cream- Daisy servingx1 40 2.5 2.0 2.0
    Parmesan shredded- kraft serving 110 8.0 1.0 9.0
    Spinach, raw- net carbs x2 or 3 cups 14 0.2 0.9 1.7
    Bacon-oscar mayer low sodium servingx2 140 12.0 0.0 8.0
everything combined after cooking all separate and sourcream on side.

its a big dinnger but i love it so worth the wait. plus i dont get to hungry at work, just have a salad with bacon, egg, seeds and ranch on it for the day. protein shake at times after workout and dessert sometimes after dinner.

make a list of ur favorite keto foods and start makin combos of them.
