When trying to cut (or gain, even) how big of a difference does sugar make when trying to get sub-10% assuming the goal deficit is still there and all macros are in check? I am IF'ing (leangains) and have a bit of a sweet tooth at night when I am consuming a majority of my calories. (Just ate a few Russell Stover Valentine candies-feeling guilty).

There's good evidence that not all carbs are created equal. Wheat carbs may be more harmful that sugar carbs vs. corn syrup carbs vs. veggie carbs. Everybody's different. But if you have a sweet tooth, I'd stay away from the Russel Stover stuff which is chocolate heavily fortified with high fructose corn syrup. Get a more premium chocolate made with 70%+ cocoa. Sweet, very low in sugars/carbs and also quite high in fiber.
