Only skimmed over the nature study abstract (I don't have full access) but I don't see any faults. You cannot quantify an insulin "spike" and on a high fat diet the mice still became insulin insensitive due to high levels of free fatty acids. Seems a natural part of the feedback loop: consumption --> insulin secretion --> elevated insulin causes desensitization --> insulin returns to baseline, dephosphorylation and sensitivity increases. I thought IRS-2 is the receptor that promotes B-cell growth though rhizome? My biochemistry is rusty be gentle.

It has been shown by multiple peer-reviewed supplement ads that 7 meals a day along with our selection of supplements are the way to go for optimal gains.

Gene expression basically means that the specific mRNA for that gene was transcribed or more was transcribed compared to basal levels. mRNA is nice to see as a readout, but ultimately the mRNA needs to be translated into a protein - protein synthesis - in order for that gene being turned "on" to possibly have some end-point effect generally. Unfortunately an increase in transcribed mRNA does not always equate to a proportional increase in translated proteins thus mRNA and protein levels need to be measured together to get a clearer picture of what's going on. Nothing in those studies shows any relevant end point effects for a normal healthy human.
