She is just going to regain all the weight that she was trying to lose. Not only is she going to suffer from a deficiency of nutrients, but she is slowing her metabolic rate down. If there is no food going to her stomach, or what looks like little next to nothing, there is really nothing for her body to metabolize. So, when she starts to eat again, she is just going to see all of that weight go back onto her body because now her body has to learn how to metabolize again.
She needs to go see a nutritionist, or somebody! I learned the hard way what eating so little does to your body. It's not pretty. Which, is why I am working myself up to 2,000 cal a day. I'm still not getting fat because I work some of it out. As long as she works out, I don't see why she needs to eat so little.
Personally I think people who eat little to lose weight are just naturally physically lazy. No offense to your S.O., either. It's just my opinion.

Even if she "went back" to eating 1000 cals, that is still extremely low. Like others have said, she needs to see a medical professional ASAP. You might want to PM Emma-Leigh. Have you ever talked to her family about it? It doesnt sound like she ever made it through a recovery if she only eats 1k cals on a regular basis.

She "used to" have an eating disorder? Me thinks this is an incorrect statement. She [s]used to[/s] has an eating disorder.
Been there, done that.
The question of what it does to your body? Let's see, where should we start? I'm a great example of how ridiculously much this will **** up your body:
Bone density of an 80 year old
Multiple fractures over the years
Severe joint damage, especially the knees (mainly severely worn away cartilage.. trust me, this is hella painful).
Pancreatic damage
Liver damage
Kidney damage (last three indicated by fluctuating but typically elevated enzyme levels).
Cardiac abnormalities, primarily ventricular atrophy.
Severe GI problems (bad gastoparesis being the #1).
Multiple hospitalizations, acute and chronic, for a variety of anorexia associated conditions.
Hundreds of thousands of dollars wasted on medical bills (not exaggerating at all).
Trust me, if she keeps it up, she's on her way there. It's not fun. I'm on my way to recovery, but most of these inflictions are permanent and won't go away no matter how "healthy" I get in the moment. You can't go back and fix these things no matter what you do. Please, please, do what you can to get her to get help. She needs to get to an ED specialist ASAP. She will just shoot right back up when she resumes normal eating again, which will probably cause her to go even MORE extreme. She needs to be made to understand she could actually DIE with that type of diet/exercise.

So in 2 weeks she'll lose 12 pounds and go back to normal. I mean it's not the optimal way and her body will likely rebound and she'll put it all back on, and a good portion of the loss will be muscle. If she ate 1500 calories a day for a month and did cardio, she would likely lose her 11 pounds in a much healthier way.

This is generally how I roll, except when it comes to loved ones. I couldn't let my wife, kids, or close family/friends do something life altering without at least speaking up.
My wife was anorexic for 4 years when she was an early teen. She was 80 lbs at 5'4". She is doing much better and eats regularly with our family, but weight and body image is always a struggle.
The health risks associated with this in a loved one are too great to "live and let live".
